Today, its guardian, Caviar House & Prunier, perpetuates the essence of fine dining. This company is the union between Caviar House, founded in 1950 by George Rebeiz, the largest importer of Iranian caviar worldwide, and Prunier, created in 1872 by Alfred Prunier and later purchased by Pierre Bergé. Caviar House & Prunier is the first company in France to produce its own caviar.

Balik – The Salmon of the Tsars

Caviar House is now the sole distributor of BALIK salmon, which takes its name from a Russian word meaning the choicest cut of the fish. This is the central section of the fish; it is superior because the thick flesh absorbs the salt and smoke to produce the most harmonious blend of flavours.

The Russian method of smoking, which takes place in the mountains of Switzerland; is of the utmost importance and is kept a closely guarded secret.
